Here’s a quick, easy, but tasty meal you can put together in a few minutes. It has a nice taco feel while still getting in some greens. We make sure to use grass fed beef and organic grass-fed dairy for the cheese and sour cream, though you can use nut cheese or plain yogurts as well.

Ingredients

  • 1 pound lean ground beef
  • 1 (1.25 ounce) package taco seasoning mix
  • 1 (16 ounce) can refried beans
  • 1 head iceberg lettuce or 1 container spring mix
  • 1/2 cup chopped onion
  • 2 cups shredded cheddar cheese
  • (Garnish to taste) almond flour chips
  • (Garnish to taste) guacamole
  • (Garnish to taste) sour cream

Instructions

  1. In a large cast-iron skillet over medium-high heat, brown grass-fed beef or ground turkey, breaking up meat into small pieces using a wooden spoon.
  2. Season with sea salt and pepper and add organic taco seasoning, refried beans, and 2 tablespoons water. Cook through, about 5 minutes. Turn off heat and set aside.
  3. Assemble salad: In a large bowl layer lettuce, organic salsa, organic refried beans, and warm taco meat. Top with organic cheese, avocado, and organic sour cream, then garnish with guacamole and almond flour chips.
